1   64-degree egg, truffle, La Quercia Prosciutto Americana, asparagus bisque

2   Pan seared scallops, celery 2 ways, apple-fennel salad, yuzu vinaigrette

3   Five-spice cured and slow roasted duck breast, red berries and port jus, pommes dauphines, legumes of the season

4   Duo of artisan cheese, accoutrements

5   Grand dessert au chocolat

Originally from Alsace, France, Chef David Baruthio has worked all around the world and has marked his 5-year anniversary in Des Moines, Iowa. His passion for fresh, well-prepared, elegant food is a challenge that Baru’s culinary team is proud to undertake every day! Thank you for the privilege and honor to be able to cook for you for 5 years. We are looking forward to continuing this adventure and going beyond what we have done.
